Roasted Greek feast with oven-baked pork burgers or indoor grill if available

🔥 Step 1: Oven-Bake the Greek Pork Burgers

What to do:

  • Preheat oven to 400°F (200°C).
  • Line a baking tray with parchment or foil.
  • Lightly oil the bottom (or use a rack if you have one).
  • Place the burgers on the tray and roast for 20–25 minutes, flipping once halfway.
  • Optional: Broil for 2–3 minutes at the end to brown the tops.

They’ll come out juicy and flavorful. Trust the herbs to carry it.

🍚 Step 2: Start the Greek Rice

  • Cook white or brown rice, and near the end, stir in:

    • Chopped green peppers and onions (lightly sautĂ© first if you like them softer).
    • Sprinkle in dried oregano, fresh basil, lemon juice, salt, pepper.
    • Optional: Add chopped hot peppers for a little fire.
    • Optional: Crumble in a bit of feta at the end if you’ve got it.

🧄 Step 3: Make the Tzatziki

If you’ve got yogurt, cucumber, garlic, and lemon — boom:

  • Grate cucumber, salt it and let it sit for 5 min, then squeeze out liquid.
  • Mix with Greek yogurt, minced garlic, lemon juice, olive oil, pinch of dill or mint if you have any.

🍄 Optional: Roasted Mushrooms as a Side

  • Halve or quarter them, toss with olive oil, salt, pepper, and oregano/basil.
  • Roast in same oven, maybe 15–20 min, till golden and tender.
  • Could be served warm or even added cold as a salad topper.

🫓 Final Plate: “Greek Night In”

  • One burger cut in half, served in pita with tzatziki, raw onions, and fresh herbs.
  • Side of herbed rice with veg.
  • Roasted mushrooms if you want the full mezze effect.

🌶 Bonus Options:

  • Hot peppers can be thinly sliced and added fresh for contrast or roasted with the mushrooms.
  • Leftover burger will reheat beautifully or crumble into the rice for a next-day bowl.

If you want to theme it up even further (lemon potatoes? tomato-cucumber salad?).
