• I love this recipe because it is truly a one-pan wonder. You just put the fresh salmon and crisp veggies on a baking sheet, season everything and pop it in the oven to roast. In just 20 minutes you've got a flavorful and healthy dinner and only one pan to clean!

One-Pan Salmon with Broccoli & Cauliflower

🛒 Ingredients

Quantity Ingredient
4 salmon fillets
2 cups broccoli florets (about 1-inch pieces) (Copy Me That)
1 cup cauliflower florets (Copy Me That)
1 lemon, divided (juice + slices) (Copy Me That)
1/2 teaspoon curry powder - or -
1/2 teaspoon smoked paprika
(You may also need olive oil, salt, pepper, optional garlic or herbs — not all sources list all seasonings.)

🔪 Instructions

  1. Preheat oven to \~400°F (about 200°C).
  2. Prepare vegetables: Place broccoli and cauliflower florets on a rimmed baking sheet or in a large baking dish. Drizzle with olive oil, season with salt & pepper. Toss to coat evenly.
  3. Add salmon: Place salmon fillets on the same pan, among the vegetables. Brush salmon with lemon juice, and season (salt, pepper, perhaps garlic or herbs).
  4. Add lemon slices: Place a few lemon slices around or on top of salmon / veggies for extra citrus flavor.
  5. Roast: Bake in the oven until salmon is cooked through (flakes easily with a fork) and vegetables are tender and slightly roasted — typically 12-20 minutes, depending on thickness.
  6. Serve: Remove from oven, squeeze extra lemon juice if desired. Serve salmon alongside roasted broccoli & cauliflower.

  • Cut vegetables into uniform pieces so everything cooks evenly.

  • Swap or add vegetables like asparagus or carrots if you like.
