The nuts are doing a lot of the heavy lifting here. They add richness and texture that plain lentil loafs sometimes lack.

Lori's Lentil-Nut Loaf
(or patties)
Ingredients
1 cup (raw) lentils
½ cup ground nuts
1 cup soft bread crumbs (1 slice in blender)
1 small onion, minced
1 small clove garlic, crushed
3 eggs, beaten
½ tsp sage, thyme or marjoram
1 T soy sauce
¼ cup tomato juice, milk or water
2 T tomato paste (opt.)
1 T oil (opt.)
Directions
Cook lentils in lightly salted water (page 193).
Mash and combine with remaining ingredients.
Pour into a loaf pan, cover with foil and bake at 350°F for 50-60 minutes or till firm in the centre, or drop onto an oiled griddle and fry till browned on both sides, or bake on a lightly buttered baking sheet.
Makes 4-6 servings.
Great sliced for sandwiches too!
