Stage:
Simple Marinade (For 2 Chicken Breasts)
Ideal for pita, salad, or chopped dishes
Flavor: Mediterranean-ish and bright â great warm or cold.
- 1/4 to 1/2 tsp salt (or none, if watching strictly)
- 1 tbsp olive oil
- 1 tbsp lemon juice (or white wine vinegar)
- 1 garlic clove, minced (or 1/4 tsp garlic powder)
- 1/2 tsp dried oregano (or mixed Italian herbs)
- Cracked pepper to taste
Optional:
- 1 tsp Dijon mustard or 1 tbsp plain yogurt (extra tang & tenderness)
 Prepare:
- Toss the chicken breasts in the marinade, coat well.
- Rest for at least 30 min, up to 4 hours.
- Bake at 400°F (200°C) for ~20â22 minutes, depending on thickness.
- Let rest, then slice thin or cube.

- Hummus or tzatziki
- Sliced cucumber + tomato
- Shredded lettuce or arugula
- Crumbled feta (if salt allows)
- Pickled onions or olives (sparingly)
