Marinated chicken bites and a world of possibilities. Added protein bites to anything. Perfect for a pita lunch. It's in the oven now and I should think of crunchy veggies first. Cucumbers perhaps? Sprouts? Let's think red onions and black olives. Feta cheese. Hummous

To oven-cook marinated shish taouk chicken breast, bake at 400°F (200°C) for 12-25 minutes

For oven-cooking marinated shish taouk chicken breast (with a labneh/garlic/tomato paste style marinade):

Temperature & Time

Oven temp: 400 °F (200 °C), preheated.

Cook time: ~22–28 minutes, whole breast, depending on thickness.

Method

Line a baking tray with parchment or lightly oil it.

Place marinated chicken breasts in a single layer. You can spoon some extra marinade on top.

Bake uncovered until the internal temperature reaches 165 °F (74 °C) at the thickest part.

Optionally, broil (grill) for the last 2–3 minutes to get a bit of char like traditional shish taouk.

Tips

Because the marinade is thick, it helps keep the meat moist, but you don’t want it to pool too much — spread it evenly.

Rest the chicken 5 minutes after cooking before slicing, so juices redistribute.

👉 If you’re cutting the chicken breast into cubes (like traditional skewers, but baked on a tray), the time will be shorter: 15–20 minutes at 400 °F.
