Ingredients:

1 cup bean sprouts
2 baby bok choy, chopped
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon sesame oil

1 tablespoon vegetable oil
Salt and pepper to taste

A delicious rice with bok choy recipe. With this easy bok choy rice, you can have something much more interesting in the same time as it takes to make plain rice.

Prep Time: 10 mins | Cook Time: 25 mins

Ingredients

2 heads baby bok choy (washed and chopped). 
 ** Keep the leaves separate from base where possible. **

1 ½ cups water ( or veggie broth )

¾ cup long grain rice

1 teaspoon soy sauce

1 teaspoon chili-garlic sauce (such as sambal)

½ teaspoon sesame oil

¼ teaspoon toasted sesame seeds

Seaweed is nice.

1) Cook the salmon

  • Pan, medium heat
  • Butter (use it generously)
  • 3–4 min per side
  • Remove

2) Build the dill butter (same pan, low heat)

  • Add another knob of butter
  • Toss in fresh dill (chopped or torn)
  • Pinch salt
  • Optional: quick squeeze of lemon if it’s nearby

Swirl ~30 seconds. Keep it glossy, not browned.

  • 1 tsp toasted sesame oil (plus more to drizzle)
  • ½ tsp soy sauce (optional, adds umami + saltiness)
  • Pinch of gochugaru (Korean chili flakes) or red pepper flakes (optional, for heat)
  • ½ tsp garlic powder or 1 small clove fresh garlic, minced
  • Sprinkle of black pepper

Rice and Beans on a Friday

Here it is Friday 8:00 and I want to eat not think. Just so happens I have some leftover chicken fried rice, a tin of beans and small tin of corn that dutifully sits in the cupboard for this very moment. 

1/4 c chicken broth if using already cooked rice 

Chopped green pepper 
Chopped green onion 
Cumin paprika coriander 

That just about does it. There was almost a tie between Black beans or White Spanish beans, just because I have two tins of white spanish beans.
