Ingredients

  • pita bread
  • raita
  • sunflower seeds
  • sesame seeds
  • alfalfa sprouts
  • spring mix lettuce
  • parsley
  • green onion
  • salt
  • lemon or vinegar (optional)

Instructions

  1. Toast sunflower and sesame seeds in a dry pan until fragrant. Remove from heat and salt lightly.
  2. Warm the pita.
  3. Combine sprouts, greens, parsley, and green onion.
  4. Spread raita on pita, or in a bowl with sliced pita; add greens, and top with toasted seeds.
  5. Finish with lemon juice or vinegar if desired.

Heat the pita: Did you know that you can heat pita easily on top of the stove using a smallish pizza pan on low heat?

Fun fact number two: When you roast nuts and seeds in a dry pan there is no wash up. Same with the pizza pan for the pita. Do you see where I am going with this?
